Homemade Cosmic Brownie Cookies

1 cup + 2 tbsp flour (143g)
1/4 cup Dutch Process Cocoa (25g)
1 tsp baking powder
A pinch of salt
1 cup chocolate chips (227g)
1/2 cup melted unsalted butter (113g)
2/3 cup brown sugar (135g)
1/2 cup granulated sugar (100g)
1 tsp vanilla
2 eggs
- Ganache
3/4 cup chocolate chips (170g)
1/4 cup hot heavy cream (60g)
Directions
- In a small bowl, combine the flour, cocoa powder, baking powder, and salt. Set dry ingredients aside.
- In a medium bowl, place chocolate chips and pour hot melted butter over them. Let sit for a few minutes, then stir until smooth.
- Into the same bowl, mix in brown sugar, granulated sugar, vanilla, and eggs. Stir all wet ingredients together until there are no lumps.
- Pour dry ingredients into the wet ingredients. Mix until no streaks of flour remain—do not overmix.
- Scoop dough using a 2-inch scooper and place portions in the freezer while the oven preheats (15 minutes).
- Bake straight from the freezer, spacing cookies well on the sheet (they’ll spread!). Bake at 350°F (175°C) for 12 minutes.
- Let cookies cool on the sheet for 15 minutes—they’ll finish setting as they cool. Transfer to a rack.
- For the ganache: Add chocolate chips to a bowl and pour hot heavy cream over them. Let sit, then stir until smooth. Allow ganache to thicken for 30–45 minutes.
- Drizzle ganache over cooled cookies and top with colorful chips.
