Just imagine fluffy popcorn swathed in a gooey marshmallow glaze infused with Funfetti cake mix, and then finished off with a confetti explosion of rainbow sprinkles. It is shockingly easy to make but yields a snack that is as dazzling as it is fun. Perfect for a birthday, game night, or any time one desires something sweet and whimsical!

Homemade Birthday Cake Popcorn
Ingredients
1 bag of popcorn (microwaveable or regular)
2 cups mini marshmallows
1/2 cup Funfetti cake mix
2 tablespoons butter
1/4 cup rainbow sprinkles
Directions
- Microwave the popcorn according to the package instructions.
- Once popped, remove any unpopped kernels and transfer the popcorn to a large mixing bowl.
- In a medium saucepan over low heat, melt the butter.
- Add the mini marshmallows and stir continuously until fully melted and smooth.
- Remove the saucepan from the heat.
- Quickly stir in the Funfetti cake mix until well combined with the marshmallow mixture.
- Pour the warm marshmallow mixture over the popcorn.
- Gently stir to coat the popcorn evenly.
- While the mixture is still warm, sprinkle the rainbow sprinkles over the popcorn and gently mix to distribute.
