Homemade Birria Tacos

Ingredients
- Roast
A piece of Cinnamon Stick
2 tsp Cumin
2 tsp Thyme
4 Bay Leaves
6 Clovers
2 tsp Oregano
2 tsp Peppercorn
7 Garlic Cloves
2 tsp Sesame Seeds
- Boil
15 Chile Guajillo
3 Chile Anchoes
8 Chile New Mexico
(Remove seeds & steams)- Meat
Half White Onion
1 Full Garlic
2 Tomatoes
3 Bay Leaves
Salt
4lbs Chuck Roast
Directions
- Meat
- To a pot add water and all of the meat ingredients listed above
- Let meat boil alone for 2 hours
- Boil
- Boil chiles for about 20 minutes or until they’re soft, add to a blender
- Roast
- Roast herbs until fragrant (I didn’t roast the thyme & cumin).
- Add herbs & spices to the blender with your chiles, along with some broth from the meat & blend.
- Add the Chile blend to your meat (strain if needed).
- Cook for another hour & 30 minutes or until meat is tender.
