Homemade Chewy Chocolate Chip Cookies

½ cup sugar
1 cup light brown sugar ½ c butter (1 stick at room temp)
1 and 1/4 cup all purpose flour
1 tsp salt
1 tsp flaky salt (for topping)
1 egg
1 tsp vanilla extract
½ tsp baking soda 4 oz semi-sweet chocolate chunks (not chips!)
4 oz dark chocolate chunks
Directions
- Whisk together the butter, sugar and light brown sugar in a bowl. (Butter should be at room temp and not melted.)
- Whisk the egg and vanilla in a small bowl. Then whisk into the butter mixture until all the ingredients are combined.
- Sift in the flour, salt and baking soda into the butter mixture. Then mix with a spatula just until all the ingredients are folded in together. Try not to overmix.
- Add the chocolate chunks and mix into the cookie dough. Then store in the fridge for 2 hours.
- Line a baking sheet with parchment paper. Preheat oven to 350 degrees.
- Using an ice cream scoop, scoop the dough onto the lined baking sheet. Leave enough room between
cookies. - Bake for 10 minutes just until they brown on the edges. Sprinkle flaky salt on top and enjoy!
- TIP! Store the cookies in an airtight container with a slice of bread to keep them soft.
