Homemade Chicken Chipotle Burrito

Homemade Chicken Chipotle Burrito

Ingredients

  • Tortillas

  • Ground Chicken

  • Bell Peppers

  • Shredded Cheddar Cheese

  • Habanero

  • Lime

  • Onions

  • Tomatoes

  • Sweet corn

  • Chipotle Sauce

  • Bell Pepper pasta

  • Tomato pasta

  • Cilantro

  • Sour Cream

  • Black Beans

  • Beed Stock

  • Hot Sauce

  • Rice

  • Oil

  • Salt

  • Pepper

  • Cumin

  • Garlic

  • Onion Powder

  • Paprika

  • Fresh Garlic

Directions

  • Gather all your ingredients
  • In a pan sear chopped onions on medium heat
  • In another pan sear onions, bell peppers on low heat with some oil for about 15 minutes
  • In the first pan add in tomatoes to the chopped onions sear for about 3 minutes
  • After letting the first pan sear for 3 minutes add garlic an cook for another minute
  • To the first pan add tomato and bell pepper paste. Fry on medium heat for 3-4 minutes
  • Add rice and fry for another 2-3 minutes
  • Add hot sauce and mix
  • Add beef broth, salt, pepper, paprika, cumin, and garlic powder. Mix well, turn heat to high and let it come to a simmer.
  • Season second pan that has bell pepper and onion with the same seasonings. Salt, pepper, paprika, cumin, hot sauce and tomato paste. Mix and cook for another 5 minutes
  • Once rice is boiling add lid, reduce heat to low and let it simmer
  • Cook ground chicken on medium heigh heat with some oil
  • To the ground chicken add in hot sauce, bell pepper, tomato paste, salt, pepper, garlic powder, cumin, and paprika
  • Mash avocado, lime juice, red onion, cilantro, salt, and pepper
  • In another bowl mix sour cream and chipotle sauce
  • Once the rice is almost done add corn and black beans. Mix well and let it cook for 4 more minutes.
  • Add sour cream to tortilla
  • Add rice to tortilla that has sour cream
  • Add your chicken and seared vegetables with cheese tomatoes and cilantro
  • Add chipotle sauce and guacamole. Roll up your burrito, then pan fry on each side on medium for 1 minute
  • Enjoy!
