Homemade Crispy Potatoes Balls

Ingredients
4-5 medium potatoes
2 tbsp cornstarch
Salt to taste
Pepper to taste
Parsley to taste
Oil for frying (vegetable or canola)
Directions
- Prepare the potatoes
- Peel the potatoes and boil them in water until soft. Check for doneness by poking them with a fork; if it’s tender, it’s ready.
- Mash the potatoes
- Once boiled and drained, mash the potatoes in a bowl. Season with salt, pepper, and parsley.
- Prepare the batter
- Add 2 tablespoons of cornstarch to the mashed potatoes and mix well to get a crispy texture.
- Shape the potato balls
- Form the seasoned mashed potatoes into small, bite-sized balls.
- Heat the oil
- In a deep fryer or pan, heat the oil to 350°F.
- Fry the potato balls
- Carefully place the formed potato balls into the hot oil. Fry them until golden brown and crispy.
- Drain and serve
- Remove the potato balls from the oil and place them on a paper towel to drain excess oil.
Notes
- For extra crunch, lightly coat the potato balls with cornstarch again before frying.
