Homemade Strawberry Lemon Cookies
Ingredients
Strawberry Batter
1/3 cup vegetable oil
2 eggs
1 box strawberry cake mix
1/2 packet strawberry jello mix
2 tsp strawberry extract
- Lemon Batter
1/3 cup vegetable oil
2 eggs
1 box lemon cake mix
1 tsp lemon extract
1 tsp yellow food coloring (optional, for enhanced color)
- Toppings
1 cup white chocolate (melted, divided into two portions)
Pink and yellow food coloring (for dyeing the melted white chocolate)
Crushed lemon cookies
Red food coloring (for decorating)
1/2 packet strawberry jello mix (for sprinkling)
1 tsp melted butter (for mixing with jello)
Fresh strawberries (cut up for garnish)
Directions
- Preheat the oven to the temperature specified on the cake mix box (usually 350°F/175°C).
- In a mixing bowl, combine 1/3 cup vegetable oil, 2 eggs, and the strawberry cake mix.
- Add 1/2 packet of strawberry jello mix and 2 tsp strawberry extract. Mix until smooth. Set aside.
- In a separate mixing bowl, combine 1/3 cup vegetable oil, 2 eggs, and the lemon cake mix.
- Add 1 tsp lemon extract and yellow food coloring (if using). Mix until smooth.
- Grease and flour a cake pan or line it with parchment paper.
- Pour the strawberry batter into one side of the pan and the lemon batter into the other side. Use a knife or spatula to gently swirl the two batters together for a marbled effect.
- Bake according to the cake mix instructions (usually 25-30 minutes). Let the cake cool completely.
- Melt the white chocolate in a microwave-safe bowl, stirring every 30 seconds until smooth.
- Divide the melted chocolate into two portions. Dye one portion pink and the other yellow using food coloring.
- In a small bowl, mix 1/2 packet of strawberry jello mix with 1 tsp melted butter to create a crumbly texture for sprinkling.
- Crush the lemon cookies into small pieces.
- Drizzle the pink and yellow melted white chocolate over the cooled cake.
- Sprinkle the crushed lemon cookies, strawberry jello mixture, and a few drops of red food coloring for added decoration.
- Garnish with cut-up fresh strawberries.
